Peanuts roasted in a pan. Jaggery melted slow. Poured together and pressed flat before it sets. Cut by hand into pieces while still warm. No machine. No refined sugar. No preservatives. The chikki your grandparents bought from the village fair — made exactly the same way in Tiptur, Karnataka.

<strong>Groundnut chikki</strong> is one of those things that sounds simple until you try to make it. The jaggery has to be cooked to exactly the right temperature — too little and it stays soft, too much and it turns bitter. The women in Tiptur know this without a thermometer. They have been making it long enough that their hands know when it is ready.
